Manchester doesn't announce itself. At 2,000 feet above sea level, Mandeville runs cooler than the coast, and the food reflects it — slower, deeper, more considered. This is Jamaica's only parish where you might want a sweater at dinner. The cooler climate means things grow here that don't grow anywhere else on the island. Irish potatoes. Strawberries. Coffee that rivals Blue Mountain at a fraction of the hype. The soil is red, the air is clean, and the kitchens are quiet. Manchester feeds Jamaica more than Jamaica knows. This is Istry's home parish. We grew up eating highland food before we had a name for it — callaloo from the backyard, citrus off the tree, coffee roasted by the neighbor. Everything we cook carries Manchester in its DNA, whether we're plating it in Kingston or serving it at a pop-up in Montego Bay.
